Egg White Omelette
1/2 to 1 cup of your favourite vegetables
1 small carton of egg whites
2 tbsp. low fat feta or any low fat cheese (goat cheese is great)
Finely chop veggies. I like to grate a bit of zuchinnin and sweet potatoe.
Yesterday I went out to my garden and picked cherry tomatoes, fresh basil and a habanera pepper I added a bit of chopped yellow pepper.
Sautee the vegetables for 5 minutes on medium heat add egg whites stir a few times and cover. Check after a couple of minutes lift the edges of the omelette to let the liquid run under top with cheese and recover for 3 to 5 minutes. Or place it under your broiler for several minutes and it will puff up nicely.
Loosen the edges with a spatula and roll it onto your plate. with a cup of lime honey and hot water you are good to go.
Enjoy, it's one of my favorites. If I am feeling really decadent I add a 1/2 can of crab meat. Yum Yum!!!
